Social Distancing Cinco De Mayo

So far 2020 has been kind of a big bummer. We’ve had to celebrate Easter within our homes, and I’ve personally had quite a few friends and family members celebrate their birthdays safely in their homes as well. Cinco de Mayo will be another holiday to add to the list of occasions to safely celebrate within our homes practicing social distancing. This year Cinco de Mayo will also be falling on a Tuesday, which again, is a bummer as it’s a missed opportunity for an amazing ‘Taco Tuesday’. If you’re looking for suggestions to throw a Social Distancing Cinco De Mayo/Taco Tuesday celebration, I have a few suggestions for how to make that happen.

Social Distancing Cinco De Mayo

Grilled Shrimp

First, I will be making the delicious grilled shrimp for my tacos.

Ingredients

1 pound shrimp

1/2 teaspoon paprika

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon oregano

1/2 teaspoon cumin

1/2 teaspoon red pepper flakes (depending on your spice tolerance)

Directions

Mix in a bowl, and assemble them on skewers to get them ready for grilling. If you are using wood skewers, I recommend soaking them in water as this will help to prevent them from burning up on the grill.

Before putting the skewers on the grill, brush them with olive oil to prevent sticking. When grilling, once they are completely opaque they are done!

Cilantro Sauce

Ingredients

1/2 cup sour cream

3 Tablespoons chopped fresh cilantro

1 teaspoon lime zest

1/4 teaspoon salt

1 Tablespoon lime juice

3/4 cup chopped green cabbage

1 minced jalapeno

1/4 minced red onion

Directions

Mix all the ingredients together and you’ll have a delicious sauce to layer on top of your shrimp.

Tacos

Use whatever you prefer in regards to tortillas, corn or flour. Personally, I try to limit my carbohydrate intake, so I have made my tortillas out of melted cheddar cheese.

Now that my tacos are assembled, it’s time to devour them!

Lime Margarita

If you need a yummy cocktail to compliment your delicious dinner, I also have a very simple recipe for home-made mix-less margaritas!

Use lime to rub around the rim of 4 old fashioned glasses. Rub rims in coarse salt and fill glasses 3/4 full with ice. In a cocktail shaker, mix 1 cup of quality silver tequila, 1/3 cup triple sec, 2/3 cup fresh lime juice, and 2 teaspoons fine sugar. Shake well, pour, and enjoy!
